| Spice
tea, or Chai, is a sweet, spicy, milky tea drink traditionally made
with a blend of spices and brewed black tea. Recipes for chai are
like recipes for fried chicken and every region, family, and chai dukan
(tea house) thinks theirs is the best.
Chai can be served hot or iced. Some folks brew the tea together with milk, spices and sweetener. Others brew the tea and spices together, then add the milk and sweetener. A third group brews the tea, stirs in the sweetener, and enjoys it without milk. It's your choice. We enjoy ours best when brewed for 10 minutes or more with equal parts water and milk and 1 teaspoon for every 8 ounces of liquid. Milk may burn if the heat is too high. Be sure to brew at a medium-high temperature. After brewing, strain into a pot, sweeten as desired and reheat as needed. |
