the Fujian Province in South China comes this very popular congou (black)
tea. Congous from
the south of China are often referred to as clarets because of their full-bodied,
winey flavor. The northern teas are considered burgundies. Ching Wo, along
with Keemuns, has a deep, full-body and makes excellent breakfast and afternoon
tea. In China this tea is often referred to as "Mao's Long March Tea",
believed to have sustained Mao Zedong as he made his way on the incredible
6,000 mile journey across China in 1934. This tea has a rich, coppery colour with a complex, winey flavor and a smooth mellow cup. We prefer this tea mid-afternoon when we so deserve a refreshing " pick-me-up". |

To
Prepare Ching Wo is best when brewed with spring water at a temperature of 210° for 4 to 5 minutes. Use one teaspoon for every 8 ounces. You can easily enjoy this tea through 2 or 3 infusions. |
