After plucking, the freshly picked leaves are left to wither on drying racks. The necessity and duration of withering varies widely according to the desired type of tea. The withered leaves are then heat treated by pan firing or steaming to stop or slow oxidation (fermentation). The leaves are then rolled to release the juices and enzymes and spread out on bamboo trays to dry. In many cases the leaf is rolled into an artistic or classic shape with the finest teas still hand-rolled.

Chinese Green
 
Lung Ching Superior 
The most renowned of all China teas, also known as Dragon Well. This hand-made classic green has a delicate golden brew with a slightly sweet taste.
Lung Ching
From the West Lake area of Hangzhou, China. This is an excellent grade of Dragon Well. Tender bud sets allow for a clear, sweet brew. Wonderful. 
Bi Luo Chun Special Grade
These hand-processed leaves are curled into the famous Green Snail Spring shape during pan firing - a slightly sweet, mild flavor with a pale brew.
Silver Thread
This spring-picked, hand-processed green resembles the threads of fine cloth. Light, delicate, aromatic.
Morning Dew Green
From China, a wonderful green tea from a silvery leaf, for your morning cup with a light, slightly sweet flavor.
Premium Mao Feng Green
This premium hairpoint is carefully made of very dark, green, almost hairlike leaves, gently twisted during its firing.
Young Hyson
These thin young leaves are rolled and twisted during their pan firing - a slightly sweet, mild flavor. Wonderful tea for every day.
Pinhead Gunpowder
This pearl tea is very tightly rolled. Very complex with a slightly sweet undertone. Watch the pellets gracefully unfurl.
Snow Dragon
Delicate, refreshing and beautiful to see. Only the buds are used for this cherished green, almost white, tea. Very delicate with a mellow undertone.
 
 
 
Japanese Green
 
Premium Sencha
From Japan, elegant, flat, dark green leaves yielding a golden-green, aromatic brew with a fresh flavor.
Hoji Cha
From Japan, the Sencha leaf is roasted to a golden brown producing a distinctive toasty flavor. Very low in caffeine.
Gen Mai Cha
Japanese Sencha green blended with roasted, puffed rice giving this tea it's traditional toasty flavor. An excellent tea.
