After
plucking, the freshly picked leaves are left to wither on drying
racks. The necessity and duration
of withering varies widely according to the desired type of tea. The
withered leaves are then heat treated by pan firing or steaming to stop
or slow oxidation (fermentation). The leaves are then rolled to release
the juices and enzymes and
spread
out on bamboo trays to dry. In many cases the leaf is rolled into an artistic
or classic shape with the finest teas still
