After
plucking, the freshly picked leaves are left to wither on drying
racks. The necessity and duration
of withering varies widely according to the desired type of tea. The
withered leaves are then heat treated by pan firing or steaming to stop
or slow oxidation (fermentation). The leaves are then rolled to release
the juices and enzymes and
spread
out on bamboo trays to dry. In many cases the leaf is rolled into an artistic
or classic shape with the finest teas still

Pinhead
Gunpowder This pearl tea is very tightly rolled. Very complex with a slightly sweet undertone. Watch the pellets gracefully unfurl. |
Bi Luo Chun Special Grade These hand-processed leaves are curled into the famous Green Snail Spring shape during pan firing - a slightly sweet, mild flavor with a pale brew. |

Black
Needle The uniqueness of this tea is it looks 'black', but will change to green when steeped. Carefully made of very dark green, hand-plucked single buds. |
Chunmee
Special Grade Spring-picked, hand-processed green tea that resembles a woman's finely formed brow. Slightly sweet, plumlike flavour -- a wonderful brew. |
