Hairy Crab |

| From the Anxi District
of China comes this wonderful hand-made tea. The leaves of this oolong
are covered with a fine, white down, hence, the name, Hairy Crab. Oolong
tea is produced using the techniques both for green and black but reducing
the withering time to allow only partial oxidation of the leaf. This
produces a more refined brew, one that is more pronounced than green
with none of black tea's astringency.
This brew is very fragrant with a golden yellow colour. The liquor is sweet and smooth with a lingering aftertaste. A tea you can enjoy all day, every day. |

To
Prepare Hairy Crab is best when brewed with spring water at a temperature of 170° to 180° for 3 minutes. Use one scant teaspoon for every 8 ounces. Enjoy this tea for 3 or more infusions. |
