A young English clerk,
thinking the tightly rolled balls of green tea looked like gunpowder pellets,
is credited with giving this pearl tea its name. Because the tightly rolled
shape helps the tea retain its freshness, it was one of the first teas
to be exported from China. The
tiny pellets tinkle into the cup when the water is added, adding a musical
quality. |

To
Prepare Gunpowder is heavier than most greens. Use a scant teaspoon per 8 ounces and do not overbrew. Use a temperature of 180° to 190° for 2 to 3 minutes. You should enjoy this tea 3 infusions. |
