Silver Needles |

| There
are other white teas, but this is the "perfect" white tea. From China's
Fujian province, these early Spring
buds are
plucked, by seasoned pluckers, before dawn, just before they are to
open. The tender buds are covered in silvery white hairs. Because of
their
silvery appearance
and
the
needle-like
shape taken on during the steaming and drying process, they are given
the name Silver Needles or Yinzhen.
Enjoy this refreshing tea in a glass or glass pot and watch the leaves point straight down, needle like, as they float in the water. The silvery, smooth appearance and delicate pale green colour will produce a very light golden brew with a slightly sweet taste. Delicate, wistful and memorable. |

To
Prepare Silver Needles is best when brewed with spring water at a temperature of 160° to 170° for 2 minutes. Use one heaping teaspoon for every 6 ounces. Enjoy this tea for 2 to 3 infusions. |
