The Lepcha word for triangle, "Soom" is a triangular-shaped tea garden high in the lush Darjeeling hills. Planted in 1860, the vast Soom Estate is one of the most densely populated in the region. Divided into three divisions, the Soom Estate is home to about 7000 people, 80% of whom secure their livelihood directly from the plantation. This estate is dedicated to improving the socio-economic lives of its people. With new roads, irritation and fresh water systems, a primary and high school on the estate, it also houses an eight-bed hospital with trained medical staff. Soon to become fully bio-organic, this estate is an exciting estate to watch. The Soom Estate produces a classic "Darjeeling" with the distinctive Muscatel character so enjoyed in this brew. With an exquisite bouquet and clear liquor, this second flush plucking (end of May through June) produces a more fully developed tea than first flush (March through April). To be enjoyed every day. |

Prepare Soom Darjeeling (2nd Flush) is best when brewed with spring water at a temperature of 210° for 3 to 4 minutes. We recommend one teaspoon for every 8 ounces. Enjoy this tea through 2 infusions. |
