Ti Quan Yin (TiKuan Yin) or Iron Goddess of Mercy from the southern Fujian Province in China is one of China's most famous oolongs. Oolong teas can be some of the most intriguing and complex of all brews. After plucking, the leaves are hand-rolled to allow the essential oils to react with the air and slowly oxidize. When the desired oxidation is reached and the edges of the leaves are a golden brown, the leaf is then heated to stop the oxidation process and rolled to form its shape. The complex flavor is exceptionally smooth with a light, lingering floral note. This superior grade TiQuan Yin (or TieGuan Yin) is best enjoyed steeped loosely in the pot, gong fu style. |

To
Prepare Ti Quan Yin is best when brewed with spring water at a temperature of 180° for 3 to 5 minutes. We encourage you to experiment with different brewing times. Use one scant teaspoon for every 8 ounces. Enjoy this tea through many infusions. |
